Serves 12
For the Chia Pudding:
100ml Almond Milk
1 tsp Vanilla Extract
RAW Chia seeds
For the Chocolate Mousse:
120ml RAW Maya honey (or another honey of your choice)
60ml Coconut Cream
88g Vegan Chocolate Chips (Measure then melted)
63g Cocoa Powder
2 Oranges (one zested and juiced, one thinly sliced for decoration)
1/4 tsp Salt
2 Medium to Large Avocados (flesh weight: 368g)
For the Chia Pudding:
Add RAW chia seeds, almond milk and vanilla extract into a large mixing bowl and mix well. Let settle for 2-3 minutes then mix again very well until you see no clumping.
Line the outside of 4 glass tumblers with thinly sliced oranges so that the orange is visible when the chia is added. Pour chia pudding into the 4 glass tumblers to just over the halfway point.
Cover the tumblers and store in the fridge overnight or for at least 2 hours.
For the Mousse:
Add the honey, coconut cream, melted vegan chocolate chips, cocoa powder, vanilla, 1 tbsp orange juice and salt to the food processor. Then add in the avocado flesh and process until very smooth. Make sure the avocado is properly blended in.
Transfer the mixture to the 4 glass tumblers, layering gently on top of the chia pudding so you have 2 defined layers and can still see the orange slices clearly.
