Serves 4
For the broccoli:
1 ½ heads of broccoli
3 cloves garlic, crushed
2 tbsp RAW extra virgin olive oil
Salt & pepper, to taste
1 lemon, zested
Sesame seeds, for garnish (optional)
For the sauce:
120g RAW whole sesame tahini
Handful of fresh basil
2 tbsp lemon juice
60ml water
1 garlic clove
1 tbsp RAW extra virgin olive oil
Salt & pepper, to taste
1. Preheat the oven to 220°C (200°C fan).
2. Cut the broccoli into small florets. Place the broccoli on a baking tray and toss with the garlic and olive oil. Season with salt and pepper. Roast for 20-25 minutes, until crisp-tender.
3. Remove the broccoli from the oven and toss with the lemon zest.
4. Blitz all the sauce ingredients in a blender until smooth.
5. Season with salt and pepper.
6. Drizzle over the broccoli and eat whilst hot.
