Serves 6
3 cucumbers, halved to make 6 chunks
1 red onion, chopped
4 medium tomatoes, chopped
6 tsp RAW Black Chia Seeds
2 avocados, mashed
Fresh coriander
1. Cut the cucumbers in half lengthwise, and then scrape out the seeds and pulp using a small spoon. Don’t throw the pulp in the bin - it can be refrigerated and added to smoothies or water for extra nutrients!
2. Neatly fill your cucumber boats with the mashed avocado, chopped tomatoes, chopped onion and fresh coriander. Finish with a generous sprinkling of chia seeds for a boost of antioxidants.
