Serves 2
¾ tsp salt, or to taste
2 cloves garlic, minced
1 tsp RAW Apple Cider Vinegar
1 ½ tbsp sugar
1 tsp Korean chilli powder or regular chilli powder
1 tsp chilli oil
½ tsp sesame oil
Sesame seeds, for garnishing
Sliced spring onions, for garnishing
1. Halve the cucumber lengthwise, and then flatten it in sections with the back of the knife. Slice into pieces, and then place in a small bowl. Add the salt to the cucumber, stir gently to combine well, and chill in the refrigerator for 15 minutes.
2. Meanwhile, combine the garlic, apple cider vinegar, sugar, chilli powder, chilli oil, and sesame oil together, and stir to mix well. Make sure that the sugar has completely dissolved.
3. Drain the salt water from the cucumber. Add the dressing to the cucumber and toss well. Top with spring onion and sesame seeds, and serve immediately.
