Gut-Friendly Strawberry Chia Seeds Pudding Bites

300g strawberries
2 tbsp RAW Black Chia Seeds
2 tbsp maple syrup
2 tbsp desiccated coconut
100g vegan chocolate chips

1. Begin by mashing the strawberries in a bowl with a fork. Then mix in the chia seeds, maple syrup, and coconut, creating a jam-like consistency.
2. Place about a tablespoon of the jam filling in mini cupcake liners, or line them on a plate. Place them in the freezer for 3-4 hours, until they are frozen solid.
3. Melt the chocolate chips in the microwave. Microwave the chocolate for 30-second increments, then stir and repeat until the chips are all melted..
4. Remove the jam bites from the freezer, dip each in the chocolate mixture, and place each chocolate-covered bite back on the plate. Drizzle the bites with any remaining chocolate.
5. Refrigerate or freeze until the chocolate hardens.
6. Once the bites are ready, top them with some flakey salt and enjoy!
