Serves 1
80g Cherry tomatoes
Half ripe avocado
Half small red onion
Small handful of coriander
100g sweetcorn, tinned
RAW Greek Extra Virgin Olive Oil
Salt to taste
1. Half tomatoes, dice avocado and finely dice red onion.
2. Pick leaves off coriander stalks and drain sweetcorn.
3. Drizzle over Olive Oil, mix and enjoy!
